These banana bread baked oats are perfect for meal prepping, as they make 4 servings to have throughout the week! They can also be prepped and cooked in the same dish to save time and washing up .
Using my favorite vanilla protein from unicornsuperfoods, their protein powders make everything taste so delicious!

Ingredients
- 2 medium ripe bananas
- 1 1/4 cups gluten-free oats
- 1/4 cup unicornsuperfoods vanilla cake protein powder
- 1 tsp nutmeg
- 2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 tsp agave syrup
- 1 cup coconut milk or other dairy-free milk
- 1 small bar of dark chocolate
- 1 large handful of walnuts
- 2 tbsp chopped almonds
Method
- Preheat the oven to 180°C.
- Mash the bananas in a medium-sized square baking dish.
- Add the dry ingredients: oats, protein powder, nutmeg, cinnamon, and baking powder to the dish.
- Incorporate the wet ingredients: vanilla extract, agave syrup, and coconut milk. Mix everything together until well combined.
- Chop the dark chocolate and walnuts into small pieces.
- Fold in the chopped dark chocolate, walnuts, and chopped almonds into the oat mixture.
- Top the mixture with some extra chopped almonds.
- Bake in the oven for 35 minutes.
- Cut into 4 slices and serve warm.
If you’re not eating them all at once, divide the batch into 4 and place them in an airtight container in the fridge.
