Ingredients:

  • 1/3 cup vegan butter: Provides a rich, creamy base for the cookie dough.

  • 1 flax egg (1 tbsp flaxseed + 3 tbsp water): A vegan alternative to eggs, adding structure to the cookies.
  • 2 heaped tbsp smooth peanut butter: Offers a creamy, nutty flavor.
  • 1 cup plain flour: Forms the bulk of the dough, giving it structure.
  • 1 tsp baking powder: Helps the cookies rise and become fluffy.
  • 1 bar vegan chocolate: Chopped into chunks, it adds rich, melty chocolate pockets throughout the cookies.

Method:

  1. Prepare the wet ingredients: In a large mixing bowl, combine the vegan butter, caster sugar, and brown sugar. Cream these together until the mixture is smooth and well-blended.
  2. Incorporate the flax egg and peanut butter: Add the prepared flax egg (mix 1 tablespoon of ground flaxseed with 3 tablespoons of water and let it sit for a few minutes to thicken) and the smooth peanut butter to the bowl. Stir until all the ingredients are fully combined and the mixture is creamy.
  3. Add the dry ingredients: Gradually mix in the plain flour and baking powder. Stir until a cookie dough begins to form, making sure there are no dry flour patches.
  4. Fold in the chocolate chunks: Chop the bar of vegan chocolate into small chunks. Gently fold these chocolate pieces into the dough, distributing them evenly throughout.
  5. Shape the cookies: Line a baking tray with parchment paper. Roll the cookie dough into 4 equal-sized balls and place them on the prepared tray.
  6. Bake: Place the baking tray in the Combi Cooker air fryer. Set it to the bake setting at 180°C (356°F) and bake for 8 minutes, or until the cookies are golden brown and slightly crisp on the edges.

Instructions
 

  • In a bowl, combine the butter, caster sugar, and brown sugar.
  • Add the flax egg and peanut butter, then mix again.
  • Add the plain flour and baking powder, and mix until a cookie dough forms.
  • Chop the chocolate into small chunks and fold them into the cookie dough.
  • Line the baking tray with parchment paper and roll the cookie dough into 4 balls.
  • Place the baking tray in the Combi Cooker air fryer at 180°C for 8 minutes on the bake setting.
