These quick and easy cookies take just 5 minutes to prep and 8 minutes to bake in the air fryer. Made with vegan butter, peanut butter, and chunks of vegan chocolate, they’re perfect for a delicious, speedy treat!

3 Measuring Cups and Spoons:
4 Baking tray
5 Parchment paper
6 Combi Cooker or air fryer
7 Knife for chopping chocolate
Ingredients
- 1/3 cup vegan butter
- 1/4 cup caster sugar
- 1/4 cup brown sugar
- 1 flax egg
1 tbsp flaxseed + 3 tbsp water
- 2 heaped tbsp smooth peanut butter
- 1 cup plain flour
- 1 tsp baking powder
- 1 bar vegan chocolate
Instructions
In a bowl, combine the butter, caster sugar, and brown sugar.
Add the flax egg and peanut butter, then mix again.
Add the plain flour and baking powder, and mix until a cookie dough forms.
Chop the chocolate into small chunks and fold them into the cookie dough.
Line the baking tray with parchment paper and roll the cookie dough into 4 balls.
Place the baking tray in the Combi Cooker air fryer at 180°C for 8 minutes on the bake setting.
