For the Dough:
In a large bowl, combine the flour, sugar, and a pinch of salt.
Cut in the fresh butter (or add the vegetable oil) until the mixture resembles coarse crumbs.
Mix in the cold water and apple cider vinegar (or white vinegar) until the dough comes together.
Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
For the Filling:
In a mixing bowl, combine the pitted cherries, brown sugar, cornstarch, a pinch of salt, and lemon juice.
Stir well to ensure the cherries are evenly coated with the sugar mixture.
**Assembling the Pie:**
Preheat your oven to 180°C (350°F).
Roll out half of the dough on a lightly floured surface and fit it into a 9-inch pie dish.
Pour the cherry filling into the dough-lined pie dish.
Roll out the remaining dough and place it over the filling. Trim and crimp the edges to seal.
Brush the top of the pie with milk and sprinkle with sugar for a caramelized finish.
Baking:
Place the pie in the preheated oven and bake for 40 minutes or until the crust is golden brown and the filling is bubbly.
Allow the pie to cool slightly before serving to let the filling set.
