Dough:
- - 4 cups all-purpose flour
- - 1/4 cup granulated sugar
- - 1 packet 2 1/4 tsp active dry yeast
- - 1 tsp salt
- - 1 cup warm milk
- - 1/4 cup unsalted butter melted
- - 2 large eggs
Filling:
- - 2 cups fresh or frozen blueberries
- - 1/2 cup granulated sugar
- - 2 tbsp fresh lemon juice
- - 1 tbsp cornstarch
Frosting:
- - 4 oz cream cheese softened
- - 1/4 cup unsalted butter softened
- - 1 cup powdered sugar
- - 1 tsp vanilla extract
- - 1-2 tbsp milk optional, to adjust consistency
Dough:
Activate Yeast: In a small bowl, combine warm milk and yeast. Let it sit for about 5 minutes until foamy.
Mix Dry Ingredients: In a large mixing bowl, whisk together flour, sugar, and salt.
Combine Wet Ingredients: Add melted butter and eggs to the yeast mixture. Mix well.
Form Dough: Pour the wet ingredients into the dry ingredients. Stir until a dough forms.
Knead: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
First Rise: Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
Filling:
Cook Blueberries: In a medium saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until mixture begins to boil.
Thicken: In a small bowl, dissolve cornstarch in a little water. Stir into blueberry mixture and cook, stirring constantly, until thickened. Remove from heat and let cool.
Assembly:
Prepare Rolls: Once the dough has doubled in size, punch it down and roll it out on a floured surface into a large rectangle, about 1/4 inch thick.
Add Filling: Spread the cooled blueberry filling evenly over the dough.
Rolls: Starting from one long edge, tightly roll up the dough into a log.
