Ingredients
  

  • - 400 g Salmon
  • - 5 Sun-Dried Tomatoes
  • - 50 g Baby Spinach
  • - 150 g Creamy Cheese e.g., cream cheese or mascarpone
  • - 2 cloves Garlic
  • - Olive Oil
  • - Sea Salt
  • - Pepper to taste

Instructions
 

Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.

    Prepare the Filling:

    • - Roughly chop the sun-dried tomatoes.
    • - In a small saucepan over medium heat, sauté the sun-dried tomatoes until they sizzle.
    • - Add minced garlic and baby spinach, cooking until the spinach is wilted.
    • - Remove from heat and stir in the creamy cheese, seasoning with sea salt. Set aside.

    Prepare the Salmon:

    • - Place salmon fillets on a cutting board and slice each fillet in half.
    • - Brush salmon with olive oil and sprinkle with sea salt.

    Stuff and Bake:

    • - Transfer salmon fillets to the prepared baking sheet.
    • - Generously stuff each salmon fillet with the prepared filling mixture.
    • - Bake on the center rack of the preheated oven for 15 to 20 minutes, or until salmon is cooked through and flakes easily with a fork.
