Preheat the Oven
- Preheat your oven to 180°C (350°F).
Prepare the Filling
- Heat a small amount of oil in a frying pan over medium heat.
- Add the chopped onion and garlic. Sauté until the onion is tender and translucent.
- Stir in the frozen spinach and cook until heated through.
- Add mixed herbs, salt, pepper, and 1/2 cup of water. Cook until the water evaporates and the filling is dry.
- Cool the filling by spreading it on a large plate and placing it in the freezer for about 5 minutes.
- Once cooled, mix in the crumbled feta cheese, grated mozzarella, and egg white until well combined.
Assemble the Pastries
- Lay out the puff pastry sheet on a flat surface.
- Evenly spread the filling over the entire pastry sheet.
- Roll the pastry into a log shape.
- Slice the log into equal-sized pieces.
Prepare for Baking
- Arrange the slices on a baking sheet lined with parchment paper.
- Brush the tops with egg yolk.
- Sprinkle sesame seeds on top.
Bake
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
