  • 2 Sharp Knife: For slicing the rolled pastry.
  • 3 Baking sheet To arrange the pastries for baking.

Ingredients
  

  • - Puff Pastry
  • - 1 sheet puff pastry
  • - Filling
  • - 120g frozen spinach
  • - 1 small onion or half a large onion
  • - 3 garlic cloves
  • - Mixed herbs to taste
  • - Salt and pepper to taste
  • - 1/2 cup water
  • - 200g feta cheese crumbled
  • - 50g grated mozzarella
  • - 1 egg separated; egg white for the filling, yolk for brushing
  • - Sesame seeds for garnish

Instructions
 

  • Preheat the Oven
  • - Preheat your oven to 180°C (350°F).
  • Prepare the Filling
  • - Heat a small amount of oil in a frying pan over medium heat.
  • - Add the chopped onion and garlic. Sauté until the onion is tender and translucent.
  • - Stir in the frozen spinach and cook until heated through.
  • - Add mixed herbs, salt, pepper, and 1/2 cup of water. Cook until the water evaporates and the filling is dry.
  • - Cool the filling by spreading it on a large plate and placing it in the freezer for about 5 minutes.
  • - Once cooled, mix in the crumbled feta cheese, grated mozzarella, and egg white until well combined.
  • Assemble the Pastries
  • - Lay out the puff pastry sheet on a flat surface.
  • - Evenly spread the filling over the entire pastry sheet.
  • - Roll the pastry into a log shape.
  • - Slice the log into equal-sized pieces.
  • Prepare for Baking
  • - Arrange the slices on a baking sheet lined with parchment paper.
  • - Brush the tops with egg yolk.
  • - Sprinkle sesame seeds on top.
  • Bake
  • - Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  • Serve
  • - Serve the pastries hot and enjoy!
