- - 250g dry macaroni
- - 2 tbsp olive oil
- - 100g hot Spanish chorizo diced
- - 1/4 cup unsalted butter
- - 2 tbsp flour
- - 1 cup milk
- - 1/2 cup heavy cream
- - 1/2 teaspoon smoked paprika
- - 1/4 teaspoon cayenne pepper
- - 3 cups sharp cheddar cheese shredded
- - Salt & pepper to taste
Cook macaroni according to package directions.
In a large pot or skillet, heat olive oil over medium and add chorizo. Cook for 5 minutes or until it starts to get crispy, stirring occasionally.
Add butter and flour. Cook for 2 minutes, stirring frequently.
Add the milk, cream, smoked paprika, and cayenne to the pot. Whisk frequently until the sauce begins to thicken.
Remove the pot from heat and add the shredded cheese. Stir until the cheese is melted and the sauce is velvety. Season with salt and pepper to your taste.
Add the cooked macaroni to the sauce and stir to combine. Serve immediately and enjoy!
