Ingredients
  

  • - 250g dry macaroni
  • - 2 tbsp olive oil
  • - 100g hot Spanish chorizo diced
  • - 1/4 cup unsalted butter
  • - 2 tbsp flour
  • - 1 cup milk
  • - 1/2 cup heavy cream
  • - 1/2 teaspoon smoked paprika
  • - 1/4 teaspoon cayenne pepper
  • - 3 cups sharp cheddar cheese shredded
  • - Salt & pepper to taste

Instructions
 

  • Cook macaroni according to package directions.
  • In a large pot or skillet, heat olive oil over medium and add chorizo. Cook for 5 minutes or until it starts to get crispy, stirring occasionally.
  • Add butter and flour. Cook for 2 minutes, stirring frequently.
  • Add the milk, cream, smoked paprika, and cayenne to the pot. Whisk frequently until the sauce begins to thicken.
  • Remove the pot from heat and add the shredded cheese. Stir until the cheese is melted and the sauce is velvety. Season with salt and pepper to your taste.
  • Add the cooked macaroni to the sauce and stir to combine. Serve immediately and enjoy!
