Ingredients
  

  • 2 fillets of white fish such as cod, halibut, or sea bass
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 lemon zested and juiced
  • 1 teaspoon honey or maple syrup optional for balance
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika optional, for a smoky touch
  • ½ teaspoon dried oregano or thyme
  • Fresh parsley for garnish
  • Lemon slices for serving

Instructions
 

  • Step 1: Prepare the Fillet
    Pat the fish fillets dry with a paper towel. This step ensures that the fish gets a nice crispy crust when seared. Season both sides with salt, pepper, paprika, and dried herbs.
  • Step 2: Sear the Fillet
    Heat olive oil in a large skillet over medium-high heat. Once hot, place the fillets skin-side down (if applicable) and cook for 3-4 minutes until golden brown. Carefully flip and cook the other side for another 2-3 minutes until fully cooked. Remove from the pan and set aside.
  • Step 3: Make the Lemon Butter Sauce
    In the same pan, reduce heat to low-medium and add butter. Once melted, stir in garlic, cooking for 30 seconds until fragrant. Pour in lemon juice and zest, followed by honey (if using). Stir everything together and let it simmer for 1 minute.

    Return the fillets to the pan, spooning the lemon butter sauce over them. Let them soak up the flavors for another minute, then remove from heat. Garnish with fresh parsley and serve with lemon slices.
