  • - 80g milk powder
  • - 8g coffee powder

Instructions

Prepare Sweet Stiff Starter:

  • - In a bowl, combine sourdough starter, bread flour, water, and sugar.
  • - Mix well until a dough forms.
  • - Cover and let it ferment until tripled in size, about 7-8 hours at 27-28°C.

Make the Dough:

  • - In a large mixing bowl or stand mixer bowl, combine bread flour, sugar, salt, milk, and the prepared sweet stiff starter.
  • - Mix until the dough comes together.
  • - Gradually add softened butter, mixing well after each addition.
  • - Knead until the dough is smooth and elastic, achieving the windowpane effect.

Prepare Coffee Filling:

  • - In another bowl, cream together softened butter and sugar until fluffy.
  • - Add the egg gradually, mixing well after each addition.
  • - Stir in milk powder and coffee powder until well combined.

Shaping the Buns:

  • - Punch down the dough and divide it into 8 equal portions.
  • - Shape each portion into a smooth ball and let them rest for 15 minutes.

Assemble and Final Proofing:

  • - Roll out each dough ball into a flat circle.
  • - Spoon the coffee filling onto the center of each circle.
  • - Fold the edges over to seal the filling inside.
  • - Place the shaped buns on a baking tray lined with parchment paper.
  • - Cover loosely with plastic wrap and let them proof for 3-3.5 hours at 28°C, until doubled in size.

Bake the Buns:

  • - Preheat the oven to 180°C (356°F).
  • - Brush the proofed buns with egg wash for a shiny finish.
  • - Bake in the preheated oven for 15-18 minutes, or until golden brown.

Cool and Serve:

  • - Remove from the oven and let the Coffee Buns cool on a wire rack.
  • - Enjoy warm or at room temperature.
