- - 500 ml water
- - 20 g fresh yeast
- - 2 tsp sugar
- - 700 g wheat flour type 550
- - 1 tsp salt
- - 1 tsp sunflower oil
- - 2 tbsp yogurt
- - 1 egg yolk
- - Sesame seeds
- - Black cumin
Warm up the water in the Thermomix for 2 minutes at 37 degrees Celsius on Speed 2.
Add fresh yeast and sugar to the warm water, then mix for 5 minutes on the Dough setting.
Transfer the dough to an oiled bowl, cover it with a damp cloth, and let it rest for about 1 hour.
Once rested, place the dough on a lightly oiled work surface and divide it into 6 equal pieces. Shape each piece into rolls.
Line 2 baking sheets with parchment paper and place 3 dough pieces on each sheet with the seam down. Space them apart, cover with a damp cloth, and let them rest for 30 minutes.
Meanwhile, preheat the oven to 240 degrees Celsius (O /U) and mix 2 tbsp yogurt and 1 egg yolk in a bowl.
Put some of the egg-yogurt mixture on each dough piece, make crosswise indentations, and sprinkle with sesame seeds and black cumin.
Bake each tray for about 13-15 minutes on the middle rack.
After baking, cover the flatbreads with a damp cloth and let them cool.
