Ingredients

  • - 1 small onion finely chopped
  • - 4-5 garlic cloves minced
  • - 1/3 cup tomato paste
  • - 1/2 teaspoon salt
  • - 1/2 teaspoon black pepper
  • - 2 teaspoons chili flakes
  • - 1 teaspoon chili powder
  • - 1/2 teaspoon sugar
  • - 1/2 teaspoon oregano
  • - 1/2 cup milk
  • - 1 tablespoon cream cheese
  • - 1/2 cup heavy cream
  • - 1/2 cup shredded cheddar cheese
  • - 1/2 cup shredded mozzarella cheese
  • - Fresh coriander or parsley for garnish
  • - 4 ounces 115 grams macaroni

Instructions
 

Heat the Pan:

  • - In a skillet, heat 1 tablespoon of butter and 1 teaspoon of olive oil over medium heat until the butter melts and the oil is hot.

Sauté Onions and Garlic:

  • - Add 1 small finely chopped onion to the pan. Cook, stirring occasionally, until the onion becomes translucent, about 5 minutes. Add 4-5 minced garlic cloves and cook for an additional 1-2 minutes until fragrant.

Add Tomato Paste:

  • - Stir in 1/3 cup of tomato paste and cook for 2-4 minutes, allowing it to slightly caramelize and blend with the onions and garlic.

Season the Sauce:

  • - Add 1/2 teaspoon salt, 1/2 teaspoon black pepper, 2 teaspoons chili flakes, 1 teaspoon chili powder, 1/2 teaspoon sugar, and 1/2 teaspoon oregano. Mix well to combine.

Make the Sauce Creamy:

  • - Pour in 1/2 cup milk and add 1 tablespoon of cream cheese. Stir until the cream cheese is fully melted and the mixture is smooth.
  • Add Cheeses:
  • - Gradually stir in 1/2 cup shredded cheddar cheese and 1/2 cup shredded mozzarella cheese. Continue stirring until the cheeses are fully melted and the sauce is creamy.

Cook the Macaroni:

  • - Meanwhile, bring a pot of salted water to a boil. Cook 4 ounces (115 grams) of macaroni according to package instructions until al dente. Drain and set aside.

Combine Pasta and Sauce:

  • - Add the cooked macaroni to the sauce. Gently stir to coat the pasta evenly. Simmer on low heat for about 1 minute to let the flavors meld together.

Finish and Serve:

  • - Top with additional shredded mozzarella cheese if desired, and garnish with fresh coriander or parsley. Optionally, sprinkle extra chili flakes for additional heat. Serve hot and enjoy.
