Easy Peach and Brie Pastries

- 1 sheet of puff pastry cut into 4 squares - 2 peaches split in half with pits removed - 4 teaspoons of maple syrup - 1 egg yolk only - 1 tablespoon of honey - 4 cubes of Brie cheese approximately 3/4 inch each - Fresh thyme leaves optional
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place 1 teaspoon of maple syrup on the parchment paper for each pastry.
Put each peach half, cut side down, on top of the maple syrup.
Cover each peach half with a square of puff pastry and brush the tops with egg yolk.
Bake for 30 minutes or until golden brown.
Top each pastry with a cube of Brie while hot, then drizzle with honey.
Optionally, garnish with fresh thyme leaves. Enjoy warm!
