Equipment

  • 1 Baking sheet
  • 2 Parchment paper
  • 3 Knife
  • 4 Pastry brush
  • 5 Spoon

Ingredients
  

  • - 1 sheet of puff pastry cut into 4 squares
  • - 2 peaches split in half with pits removed
  • - 4 teaspoons of maple syrup
  • - 1 egg yolk only
  • - 1 tablespoon of honey
  • - 4 cubes of Brie cheese approximately 3/4 inch each
  • - Fresh thyme leaves optional

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Place 1 teaspoon of maple syrup on the parchment paper for each pastry.
  • Put each peach half, cut side down, on top of the maple syrup.
  • Cover each peach half with a square of puff pastry and brush the tops with egg yolk.
  • Bake for 30 minutes or until golden brown.
  • Top each pastry with a cube of Brie while hot, then drizzle with honey.
  • Optionally, garnish with fresh thyme leaves. Enjoy warm!
