Preheat the oven to 200°C (or preheat the air fryer to 180°C).
Peel and chop the sweet potato into small chunks.
Place the sweet potato on a baking tray, drizzle with olive oil, and season with paprika, salt, and pepper.
Bake in the oven for 25 minutes or air fry for 20 minutes until golden and crispy.
Meanwhile, slice the cucumber and quarter it. Halve the cherry tomatoes. Set aside.
Heat a nonstick pan over medium heat. Add a small amount of vegetable oil.
Place the Planted chicken tikka skewers in the pan and cook for a few minutes on each side until heated through and slightly charred.
Spread hummus at the bottom of a bowl.
Arrange mixed leaves, sweet potato chunks, and chicken tikka skewers in the bowl.
Top with cucumber slices, cherry tomatoes, pomegranate seeds, and pumpkin seeds.
