Ingredients
  

  • - 4 medium potatoes
  • - 2 medium carrots
  • - 1 large onion
  • - 4-5 tablespoons olive oil
  • - 10 pickled gherkins
  • - Salt to taste
  • For the Sauce:
  • - 1 tea glass of yogurt
  • - 2 tablespoons mayonnaise
  • - 1 tablespoon mustard

Instructions
 

Prepare Vegetables:

  • - Slice the onion into thin strips.
  • - Grate the carrots.

Caramelize:

  • - Heat olive oil in a pan over medium heat.
  • - Add the sliced onions and cook until translucent and golden brown.
  • - Add the grated carrots and sauté until tender.

Cook Potatoes:

  • - Dice the potatoes and boil in salted water until tender, about 15-20 minutes.
  • - Drain and let cool slightly.

Make Sauce:

  • - In a bowl, mix yogurt, mayonnaise, mustard, and a bit of olive oil until smooth.

Combine:

  • - In a large bowl, mix the cooked potatoes, caramelized onions and carrots, and sliced pickled gherkins.
  • - Pour the sauce over the mixture and toss gently to combine.

Serve:

  • - Chill in the refrigerator if desired, then garnish with fresh herbs before serving.
