Spinach Spread

INGREDIENTS
150 g fresh spinach
120 g ricotta cheese
150 g low-fat quark (under 10% fat)
1 teaspoon lemon juice
1 clove garlic (pressed)
Salt
Pepper

INSTRUCTIONS

  1. Place spinach leaves in a bowl and pour boiling water over them. Immediately drain all the water. Mix the spinach with ricotta, quark, and lemon juice. If the spinach leaves are too large, chop them before adding the other ingredients. Then, add garlic, salt, and pepper to the mixture.
  2. The finished spread can be stored in the refrigerator for up to 3 days. It can be served, for example, with whole grain bread. It also pairs wonderfully with fresh vegetables as a dip.
