Ingredients
For the pudding:
- 1 egg yolk
- 1 liter of milk
- 3 tablespoons of rice flour (if unavailable, you can use regular flour)

- 1 tea glass + 2 tablespoons of sugar
- 1 packet of vanilla
For the pan:
- 5 tablespoons of powdered sugar
Note: My knife is plastic, so my pan did not get scratched. Even if my knife wasn’t plastic, I didn’t press down hard to shape the dessert with the knife. I just touched it gently to shape it. The high-pitched sound when cutting is because the knife is plastic. Best regards .

- Prepare the Pudding:
- In a large mixing bowl, combine the egg yolk, milk, rice flour (or regular flour), starch, and sugar. Mix well until all ingredients are thoroughly incorporated.
- Place the mixture on medium heat and cook while stirring continuously. This helps prevent lumps from forming and ensures the pudding thickens evenly.
- Once the mixture thickens to a pudding-like consistency, add the vanilla and mix well. Remove the pot from the heat.
- Caramelize the Sugar:
- Evenly spread the powdered sugar across the bottom of a large, flat pan. Place the pan on low heat.
- Allow the sugar to melt and caramelize slowly. Do not stir the sugar during this process to ensure a smooth caramel layer.
- Watch the sugar carefully to prevent it from burning. The goal is to achieve a nice golden-brown caramel color.
- Combine and Cook:
- Once the sugar has caramelized, carefully pour the prepared pudding mixture over the caramel layer in the pan.
- Cook the mixture on low heat for about 15 minutes. Occasionally rotate the pan to ensure even cooking and to prevent sticking.
- Cool and Set:
- After cooking, remove the pan from the heat and allow it to cool slightly.
- Transfer the pan to the refrigerator and let the dessert set for at least 2 hours. This helps the flavors meld together and the pudding to firm up.
- Serve:
- Once the dessert has set, use a plastic knife to cut it as shown in the video. The use of a plastic knife prevents scratching the pan and helps maintain the dessert’s smooth surface.
- Gently fold each piece into a single layer and place them on a serving plate.
