  • Combine sourdough starter, bread flour, water, and sugar. Let it triple in size at 27-28°C for 7-8 hours.
  1. Make the Dough:
  • In a mixing bowl, combine bread flour, sugar, salt, milk, and sweet stiff starter. Mix until the dough forms and becomes elastic.
  • Gradually add softened butter in batches, kneading until fully incorporated and the dough achieves a smooth, elastic texture (window pane effect).
  1. First Proofing:
  • Place the dough in a greased bowl, cover, and let it proof for 2 hours at 28°C, or until doubled in size.
  1. Prepare Coffee Filling:
  • In a separate bowl, mix softened butter with sugar until creamy.
  • Gradually add the egg in batches, mixing well after each addition.
  • Add milk powder and coffee powder, stirring until well combined.
