Ingredients:
- 500 ml water
- 20 g fresh yeast
- 2 tsp sugar
- 700 g wheat flour (type 550)
- 1 tsp salt
- 1 tsp sunflower oil
- 2 tbsp yogurt
- 1 egg yolk
- Sesame seeds and black cumin for sprinkling
Preparation of Yeast Mixture:
Start by warming 500 ml of water in a Thermomix for 2 minutes at 37 degrees on speed 2. Then, add 20 g of fresh yeast and 2 tsp of sugar to the warm water and mix until dissolved.
Making the Dough:
Add 700 g of wheat flour (type 550), 1 tsp of salt, and 1 tsp of sunflower oil to the yeast mixture. Knead the ingredients for 5 minutes on the dough setting of the Thermomix until a smooth dough forms.
Rising and Shaping:
Transfer the dough to a large oiled bowl, cover it with a damp cloth, and let it rise for about 1 hour until it doubles in size. Once risen, place the dough on a lightly oiled work surface, divide it into 6 equal pieces, and shape each piece into a roll.
Second Rising:
Line 2 baking sheets with parchment paper and place 3 dough rolls on each sheet. Cover them with a damp cloth and let them rise for another 30 minutes.
Preparing the Topping:
Meanwhile, preheat the oven to 240 degrees Celsius (O /U). In a small bowl, mix 2 tbsp of yogurt with 1 egg yolk.
Topping and Seasoning:
Brush each dough roll with the egg-yogurt mixture, make crosswise indentations on the top, and sprinkle with sesame seeds and black cumin.
Baking:
Place the baking sheets in the preheated oven and bake the rolls for approximately 13-15 minutes until golden brown.

- Once rested, place the dough on a lightly oiled work surface and divide it into 6 equal pieces. Shape each piece into rolls.
- Line 2 baking sheets with parchment paper and place 3 dough pieces on each sheet with the seam down. Space them apart, cover with a damp cloth, and let them rest for 30 minutes.
- Meanwhile, preheat the oven to 240 degrees Celsius (O /U) and mix 2 tbsp yogurt and 1 egg yolk in a bowl.
- Put some of the egg-yogurt mixture on each dough piece, make crosswise indentations, and sprinkle with sesame seeds and black cumin.
- Bake each tray for about 13-15 minutes on the middle rack.
- After baking, cover the flatbreads with a damp cloth and let them cool.
