Puffy Pita bread, known for its delightful puffiness, is a staple in many Middle Eastern cuisines. This recipe will guide you through creating soft, fluffy pita bread that will impress your guests and elevate any meal. Whether served warm with hummus, filled with your favorite ingredients, or simply enjoyed on its own, this homemade pita bread is a versatile and delicious addition to your baking repertoire.

Ingredients:

  • 1 cup warm milk
  • 1/2 cup warm water
  • 1/2 cup yogurt
  • 1 fresh yeast (or 2 packets of dry yeast)
  • 1 tablespoon sugar
  • 1.5 teaspoons salt
  • 2 tablespoons vegetable oil
  • 5 to 5.5 cups flour (measured with a 200 ml cup)

Instructions:

  1. In a mixing bowl, combine all the ingredients except for the flour.
  2. Gradually add the flour while kneading the dough. My dough required 6.5 cups of flour to achieve the right consistency.
  3. Once the dough is soft and doesn’t stick to your hands, shape it into a ball and place it back in the mixing bowl. Cover the bowl with plastic wrap and let it rise in a warm place for 1 hour.
  4. After the dough has risen, deflate it by folding it from the outside towards the center. Transfer it to a lightly floured surface and divide it into 10 equal pieces, shaping each piece into a ball.
  5. Lightly flour the surface again and roll out each ball into a 12-13 cm (4.7-5.1 inches) circle using a rolling pin.
  6. Place the rolled-out dough on baking trays (5 pieces per tray).
  7. Bake in a preheated oven at 250°C (482°F) for about 5 minutes until they puff up and turn golden.
