Delicious Gözleme

Ingredients:

For the dough:

  • 3 cups flour
  • 2 packets baking powder
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • Water

  • 1 kg spinach
  • 2 onions
  • 1 teaspoon red pepper paste
  • 1 teaspoon black pepper
  • Olive oil
  • Salt

For cooking:

  • Olive oil

Instructions:

  1. Prepare the Dough:
  • In a large bowl, combine the flour, baking powder, and salt.
  • Make a well in the center and add the water and olive oil.
  • Knead the mixture until you obtain a soft dough. Let it rest for about 20 minutes.
  1. Prepare the Filling:
  • Clean and chop the spinach, then rinse it thoroughly in plenty of water.
  • Place the spinach in a colander and let it sit for about 10 minutes to drain excess water.
  • Finely chop the onions.
  • In a mixing bowl, combine the spinach, onions, red pepper paste, black pepper, salt, and a drizzle of olive oil. Mix gently with your hands to avoid bruising the spinach.
  1. Assemble the Gözleme:
  • Divide the dough into small balls (about the size of a walnut).
  • Roll out each ball into a thin circle on a lightly floured surface.
  • Place a generous amount of the spinach filling on one half of the dough circle, then fold the other half over to cover the filling. Press the edges together to seal.
  1. Cook the Gözleme:
  • Heat a non-stick pan or griddle over medium heat and brush lightly with olive oil.
