Su Böreği, a traditional Turkish pastry, is a beloved dish often found gracing the tables during special occasions and family gatherings. Known for its rich and savory flavor, Su Böreği is characterized by its delicate layers of dough, creamy cheese filling, and a unique preparation process that involves boiling the pastry sheets before baking. Su Böreği (Water Pastry)

Ingredients (for a large tray):

  • 6 eggs
  • 1 tablespoon yogurt
  • 1 tablespoon salt
  • 35 ml water (quarter of a tea glass)
  • 5.5 to 6 cups of flour (depending on the size of the eggs, the amount of flour may vary; the dough should be somewhat firm)

For the dough:

  • Mix 2 tablespoons of starch into the flour

For the filling:

  • 750 grams of white cheese
  • 200 grams of butter
  • 65 ml vegetable oil (half a tea glass)
  • Parsley, optional

For boiling and soaking:

  • Cold water and 2 tablespoons of salt

Instructions:

  1. Beat the eggs, yogurt, and salt together.
  2. Gradually add the flour, kneading until you achieve a smooth, firm dough.
  3. Divide the dough into 12 portions, cover, and let them rest for 10-15 minutes.
  4. Roll each portion into a sheet slightly larger than your baking tray. The sheets should not be too thin.
  5. Spread the sheets on a table or a clean cloth.
  6. Fill a large pot with boiling water, adding 1 tablespoon of salt. In another bowl, prepare cold water with 1 tablespoon of salt.
  7. Melt the butter and mix it with the vegetable oil.
  8. Line your baking tray with parchment paper and grease it, or simply grease the tray generously.
  9. Boil each dough sheet for about 30 seconds, then transfer it to the cold water. Drain and lay it in the tray.
  10. Brush the first two layers with oil, then continue brushing each subsequent layer. Every second layer, sprinkle with cheese and, if desired, parsley.
  11. For the last two layers, do not add cheese. Brush the top layer with the remaining oil.
  12. Bake in a preheated oven at 220-230°C (428-446°F) until the top and bottom are nicely browned, about 45 minutes.
