Apricot and Thyme Galette with Almond Crust



“Fruit galette is my ultimate summer dessert! It’s super easy to make, and there are so many recipe variations that it never gets boring . Grab the recipe for this apricot and thyme galette with almond crust below and enjoy !

Recipe:

For the dough:

  • 150g very cold butter
  • 300g all-purpose flour
  • 3 tbsp sugar
  • 75ml ice water
  • 1 tsp vanilla extract

For the filling:

  • 8-9 apricots
  • 2 tbsp sugar
  • Several small thyme sprigs
  • 1 egg (for brushing)
  • 1 tbsp sugar (for sprinkling)
  • 2 tbsp almond flakes (for sprinkling)

Preparation:

  1. Combine flour, sugar, butter, and vanilla in a large bowl. Knead by hand until crumbly.
  2. Add water and knead into a smooth ball. Flatten into a disc, wrap in plastic wrap, and refrigerate for 1 hour.
  3. For the filling: Remove pits and halve the apricots.
  4. Roll out the chilled dough between two sheets of parchment paper to about 4-5mm thick.
  5. Arrange apricots on the dough, leaving a 5cm border. Fold the edges of the dough inward.
  6. Sprinkle 2 tbsp of sugar over the apricots.
  7. Line a baking sheet with parchment paper and place the galette on it. Brush the dough with beaten egg and sprinkle edges with almond flakes and 1 tbsp sugar.
  8. Preheat oven to 180°C and bake the galette for about 40 minutes until golden brown.
  9. Sprinkle warm galette with thyme leaves and serve with vanilla ice cream
