Fajitas:
Ingredients:

  • 700g thinly sliced beef
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 1 onion
  • Olive oil (for sautéing vegetables)
  • 2 tablespoons soy sauce

Marinade for Beef:

  • 3 tablespoons vinegar
  • 1/4 cup olive oil
  • 1/2 cup soy sauce
  • 2 cloves of garlic
  • 1 teaspoon black pepper
  • 1 teaspoon thyme, sweet paprika

Instructions:

  1. Mix all marinade ingredients and rub over the beef. Let it marinate ideally overnight, or for 3-4 hours.

  • 1/2 tomato, diced
  • Juice of 1/2 lemon
  • Handful of parsley
  • 1 garlic clove, grated
  • Salt and pepper to taste

Mash avocado with lemon juice, then mix in remaining ingredients.

Sour Cream:
Ingredients:

  • 4 tablespoons strained yogurt
  • 1 tablespoon mayonnaise
  • Juice of 1/4 lemon
  • 2 sprigs of dill
  • Pinch of salt
