Ingredients:

Base:

  • 90 g butter
  • 70 g sugar
  • 2 tsp vanilla sugar
  • 2 eggs (size M-L)
  • 120 g flour
  • 1 tsp baking powder
  • 40 ml milk
  • 1/2 bottle bitter almond flavoring or 1 tsp almond extract

Topping:

  • 3 small apples
  • 1 tbsp brown sugar

Almond Caramel:

  • 60 g brown sugar
  • 30 g butter
  • 50 ml cream
  • 1/2 tsp cinnamon (optional)
  • 1/8 tsp salt
  • 100 g chopped almonds

Instructions:

  1. Preparation:
  • Preheat the oven to 160°C (fan).
  • Line a 20 cm springform pan with parchment paper and butter the sides.
  1. Making the Base:
  • Mix together the butter, sugar, vanilla sugar, eggs, flour, baking powder, milk, and bitter almond flavoring (or almond extract) until smooth (in the Thermomix for 30 seconds at speed 4).
  • Pour the mixture into the prepared pan and smooth it out.
  1. Preparing the Apples:
  • Peel, halve, and core the apples.
  • Make several cuts into the apples with a knife.
  • Place the apples cut side down on the batter, press slightly, and sprinkle with 1 tbsp brown sugar.
  1. Baking the Base:
  • Pre-bake the base with apples on the second rack from the bottom for 25 minutes.
  1. Making the Almond Caramel:
  • Melt the brown sugar and butter in a pan.
  • Add the cream, cinnamon (optional), and salt.
  • Stir until a creamy consistency is achieved.
  • Add the chopped almonds and stir in.
  1. Finishing the Cake:
  • Take the cake out of the oven briefly.
  • Spread the almond caramel over the apples.
