Creamy Mushroom Soup Recipe 💛

Ingredients:

  • 2 tbsp butter
  • 1 onion, chopped
  • 3 tbsp flour
  • 1 cup chicken broth
  • 2.5 cups milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups sliced mushrooms
  • 1/2 cup heavy cream
  • 1/2 cup cooked chicken, diced (optional)
  • Chopped parsley, to taste

Instructions:

  1. In a pot over medium heat, melt the butter and add the onion. Sauté until the onion is translucent, then add the mushrooms (if using canned mushrooms, be sure to rinse them well) and sauté with the onion for about a minute.
  2. Add the flour and mix it well with the mushrooms until combined.
  3. Pour in the chicken broth while stirring continuously, season with salt and pepper, then pour in the milk. Let it come to a boil for about a minute, then add the cream and continue stirring until it thickens to your desired consistency. You can also add diced chicken at this point if desired.
