  • 200g feta cheese, crumbled
  • 50g grated mozzarella
  • 1 egg (separated; the white will be mixed into the filling, and the yolk will be used to brush the pastry)
  • Sesame seeds

Method

Preheat the Oven

  • Preheat the oven to 180°C (350°F).

Prepare the Filling

  1. Heat a small amount of oil in a frying pan over medium heat.
  2. Add the chopped onion and garlic, and fry for a few minutes until the onion becomes tender and translucent.
  3. Add the frozen spinach and continue to stir.
  4. Add the mixed herbs, salt, pepper, and 1/2 cup of water.
  5. Continue to cook until all the water has evaporated and the filling is dry.
  6. Allow the filling to cool. For the quickest cooling, spread it out on a large plate and place it in the freezer for about 5 minutes.
  7. Once cooled, add the crumbled feta cheese, grated mozzarella, and egg white. Mix well until all ingredients are well combined.

Assemble the Pastries

  1. Lay out the puff pastry sheet on a flat surface.
  2. Spread the filling evenly over the entire pastry sheet.
  3. Roll the pastry up into a log shape.
