Pineapple Cherry Cupcakes

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup maraschino cherries, chopped
  • 1/2 cup shredded coconut
  • 1/4 cup pineapple juice
  • 1/4 cup maraschino cherry juice

Instructions:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with pineapple juice and cherry juice.
  5. Fold in crushed pineapple, chopped cherries, and shredded coconut until well combined.
  6. Divide batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cupcakes to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
