Ingredients
For the dough:
- 3 cups of flour
- 2 cups of cornmeal
- 2 eggs (one yolk for brushing)
- 1 packet of baking powder
- 150 grams of butter (at room temperature)
- 1 tea glass of vegetable oil (125 ml)
- 3 tablespoons of yogurt
- 1.5 teaspoons of salt
For the filling:
- 100 grams of white cheese
For the topping:
- 1 egg yolk
- Sesame seeds
- Black cumin seeds
Preparation
- In a mixing bowl, combine the room temperature butter, vegetable oil, yogurt, eggs, salt, cornmeal, a portion of the flour, and baking powder. Start kneading the mixture. Gradually add more flour and continue kneading until the dough comes together.
- Transfer the dough to a work surface and divide it into four equal parts.
- Roll each part into a log and then divide into smaller pieces. Shape each piece into a ball and flatten it with your hands.
- Place a portion of the cheese filling in the center of each piece. Fold the dough over the filling and reshape into a ball.
- Place the prepared pastries on a baking tray. This recipe makes approximately 12 pastries, but the number can vary based on the size. You can also use any filling you prefer.
- Brush the tops of the pastries with the reserved egg yolk. Sprinkle with sesame seeds and black cumin seeds as desired.
- For better rising and even baking, make small cuts on the tops with a knife.
- Bake the pastries in a preheated oven at 180°C (350°F) for 30 minutes, using the top and bottom heat setting without the fan.
