Eggplants with Cheese and Egg

Ingredients for 2-4 people:

  • 2 eggplants
  • 4 egg yolks
  • 4 tablespoons tomato sauce
  • 75 g mozzarella cheese
  • Cherry tomatoes
  • Oregano
  • Parsley
  • Oil
  • Salt

Preparation:

  1. Cut the eggplants in half lengthwise. Season with salt and a little oil. Bake them face down on baking paper for 30 minutes at 200°C, heating up and down in a preheated oven.
  2. Mash the flesh of the eggplants and top with a spoonful of tomato sauce and grated mozzarella cheese. Finish with halved cherry tomatoes to taste and make a small well in the cheese to place the egg yolk. Put it in the oven for 5 minutes at 180°C. Sprinkle with chopped parsley and serve immediately without letting it cool.

TIP: If you want to prepare them in advance, store them already baked in the refrigerator. While preheating the oven, fill them, and they will be ready to eat in five minutes.
