Ingredients for 2-4 people:
- 2 eggplants
- 4 egg yolks
- 4 tablespoons tomato sauce
- 75 g mozzarella cheese
- Cherry tomatoes
- Oregano
- Parsley
- Oil
- Salt
Preparation:
- Cut the eggplants in half lengthwise. Season with salt and a little oil. Bake them face down on baking paper for 30 minutes at 200°C, heating up and down in a preheated oven.
- Mash the flesh of the eggplants and top with a spoonful of tomato sauce and grated mozzarella cheese. Finish with halved cherry tomatoes to taste and make a small well in the cheese to place the egg yolk. Put it in the oven for 5 minutes at 180°C.
