The process is simple: cocoa biscuits are spread with caramel, filled with a light coffee cream, whipped cream, and cream cheese. The sides are coated with cream and covered with nougatine. After a few hours of chilling, they are ready to eat.

Cream / Ingredients:

  • 250 ml of chilled whipped cream
  • 250 g of mascarpone or cream cheese
  • 16 g of Dr. Oetker klop-fix (a whipped cream stabilizer)
  • 8 g of vanilla sugar or vanilla extract
  • 40 g of powdered sugar
  • 3.6 g of espresso coffee of your choice

Ingredients for Assembly:

  • 10 cocoa biscuits
  • Filling: 1 jar of salted caramel
  • Topping: nougatine (caramelized and crushed roasted peanuts)

Instructions:

  1. In a deep bowl, combine the cream cheese with klop-fix, vanilla sugar, powdered sugar, and espresso coffee. Mix for 1 minute. Gradually add the whipped cream without beating until it becomes completely firm.
  2. Place the cream in a piping bag.
  3. Spread caramel on a biscuit. Put a dollop of cream on top. Place a second biscuit on top.
  4. Spread the cream on the sides. Pat the sides with nougatine (caramelized peanuts) and place the pastry on a piece of paper.
  5. Put a generous amount of cream on top and finish with a mocha bean (small chocolate piece). Note: Mocha beans are made from dark chocolate and are ideal for dessert decoration.
