Ingredients of TAS kebabi:
- 750g diced meat (preferably lamb)
- 60-70g tail fat (or substitute with butter and olive oil)
- 1 onion
- 4-5 green long peppers
- 1 heaped tablespoon tomato paste
- 2 cups hot water
- 3 medium-sized potatoes
- Salt to taste
Preparation:
- In a pressure cooker, melt the tail fat until it browns, then add the diced meat and sauté over high heat until browned.
- Once the liquid evaporates, add chopped onions and sauté until translucent.
- Add chopped green peppers, sauté for a few minutes, then add tomato paste and sauté until fragrant.
- Pour in hot water, cover, and simmer over medium heat for half an hour until the meat is tender.
- Meanwhile, peel and dice the potatoes, fry them, and set aside.
- Once the meat is cooked, add the fried potatoes, salt to taste, check the liquid level, and adjust if needed by adding boiling water.
