  • 1 medium zucchini
  • Half a bunch of parsley
  • Half a bunch of dill
  • 2 spring onions
  • Some grated cheese
  • 2 eggs
  • Half a cup of olive oil
  • 1 cup of flour
  • Half a packet of baking powder
  • 1 teaspoon of black pepper
  • 1 teaspoon of red pepper flakes
  • Half a teaspoon of salt

Instructions:

  1. Grate the zucchini using the coarse side of a grater and squeeze out the excess juice.
  2. Finely chop the parsley, dill, and spring onions.
  3. In a mixing bowl, combine the grated zucchini, chopped greens, grated cheese, eggs, olive oil, flour, baking powder, black pepper, red pepper flakes, and salt. Mix until well combined and you have a thick batter.
  4. Heat a non-stick frying pan over medium heat and add a spoonful of the batter, spreading it slightly to form pancakes.
