Vegetarian potato salad

Ingredients:

  • 500g potatoes
  • 2 onions
  • 2 tbsp sugar
  • 4-5 tbsp apple cider vinegar
  • Salt/pepper
  • 1 tsp Dijon mustard
  • 5 tbsp vegetable broth
  • 75g lamb’s lettuce

Preparation:

  1. Peel, wash, and cook the potatoes in salted water for about 20 minutes.
  2. Meanwhile, peel the onions, finely dice them, and sauté in 1 tbsp of hot oil until translucent. Add 1 tbsp sugar and mustard, and sauté for about 1 minute.
  3. Add the broth and 4-5 tbsp vinegar. Season with salt and pepper, and simmer for about 3 minutes. Remove from heat. Drain the potatoes, slice them, and mix with the marinade.
