Ultimate Red Bean Buns

Are you like me, who loves to cram maximum filling into your buns? For me, the rule of thumb is at least 60% or more. If you love baking and delicious fillings, here’s a simple red bean buns recipe for you.

Ingredients

Sweet Stiff Starter

  • 30g sourdough starter
  • 90g high protein flour
  • 40g water
  • 20g sugar

Dough

  • 300g high protein flour
  • 30g sugar
  • 6g salt
  • 150g milk
  • 1 whole egg (55g)
  • 30g unsalted butter
  • All of the sweet stiff starter

Fillings

  • 30g x 16 (roll into balls)

Method

  1. Prepare Sweet Stiff Starter:
  • Prepare the sweet stiff starter and use it when it triples in size, which takes about 7-8 hours at 27-28°C.
  1. Mix Ingredients:
  • Mix everything except the butter until the dough comes together and is strong.
  • Add the butter in 2-3 batches and knead until the butter is fully incorporated and the dough achieves a windowpane effect.
  1. Divide the Dough:
  • Divide the dough into 16 equal parts.
  • Roll each part into a smooth ball and let rest for 15 minutes.
  1. Prepare the Buns:
  • Roll out the dough and wrap it with your favorite fillings.
  • Final proof at 28°C for 3-3.5 hours or until the dough rises 1.5 times in size.
  1. Prepare for Baking:
  • Brush the buns with egg wash.
  • Sprinkle with black (or white) sesame seeds.
  1. Bake:
  • Bake at 180°C for 18-20 minutes.
