I feel like Nandos is everyone’s favorite—it’s definitely a hit in my house—so I had to recreate something inspired by it. The result was unreal! Also, I just love homemade chips! Don’t you?

Ingredients: (Serves 2)

  • 270g chicken breast
  • 50g light halloumi
  • 500g Maris Piper potatoes
  • 50g Peri-peri lemon & herb sauce
  • 30g Perinaise sauce
  • Salad of choice

Method:

  1. Prepare the Chips:
  • Peel and cut your potatoes into fries.
  • Place them in your air fryer tray, and season with salt and pepper.
  • Add a few sprays of low-calorie spray oil and give the chips a good shake.
  • Cook in the air fryer at 200°C for 15-20 minutes, or until cooked through.
  1. Marinate the Chicken:
  • Cut your chicken breast into chunks.
  • Marinate the chunks with the lemon & herb peri-peri sauce.
  • Cook in your air fryer at 190°C for 10 minutes, or until cooked through.
  1. Cook the Halloumi:
  • Fry your halloumi on each side for a few minutes until browned.
  1. Assemble the Salad:
  • Plate everything up.
  • Add a drizzle of Perinaise sauce over the top.
