This salad features boiled beetroot, juicy orange segments, peppery arugula, creamy feta cheese, and crunchy pine nuts, all brought together with a delicious homemade dressing. It’s simple to prepare and sure to impress!

📝 Ingredients:

  • 1 boiled beetroot
  • 1 orange
  • Arugula
  • Feta cheese
  • Nuts (any type can be used; in this case, we chose pine nuts)

🥣 For the dressing:

All ingredients are in equal proportion

  • Olive oil
  • Honey
  • Whole grain mustard
  • Lemon juice
  • Salt and pepper

Preparation:

  1. Cut the boiled beetroot into cubes.
  2. Peel the orange and cut it into slices or segments.
  3. Wash and dry the arugula.
  4. Crumble the feta cheese.
  5. Lightly toast the pine nuts in a pan without oil.

For the dressing:

  1. In a bowl, mix olive oil, honey, whole grain mustard, and lemon juice in equal proportions.
  2. Add salt and pepper to taste.

Assembly:
