Ingredients:
- 1 organic lemon
- 3 cloves of garlic
- 400g green asparagus
- 250ml Alpro Cooking Light
- 10 prawns (with shells)
- 1 egg
- 50g grated Parmesan cheese
- 200-250g pasta (uncooked)
Instructions:
- Preparation:
- Finely chop the garlic.
- Trim the ends of the green asparagus by about 2 cm and cut the rest into thirds.
- Zest the lemon and then halve it.
- Saute Asparagus and Garlic:
- Heat some oil in a large non-stick pan or wok.
- Saute the asparagus and garlic until the asparagus is tender. Then, remove them from the pan.
- Cook the Prawns and Prepare Pasta:
- In the same pan, sauté the prawns (with shells) with a bit of oil and lemon juice for about 4 minutes, turning occasionally. Then, remove them from the pan.
- Meanwhile, cook the pasta according to the package instructions.
- Prepare the Sauce:
- In a tall container, mix together the egg, Alpro Cooking Light, salt, pepper, Parmesan cheese, and half of the lemon zest until well combined.
- Finish the Dish:
- Return the asparagus to the pan and briefly sauté. Then, deglaze the pan with a bit of broth and lemon juice.
- Add the sauce mixture to the pan and stir briefly. Season to taste.
- Finally, add the cooked pasta to the pan and mix everything together. Serve the dish garnished with the cooked prawns and the remaining lemon zest.
