Stuffed Potato Bowls with Savory Ground Beef

Ingredients:

For the Potatoes:

  • 1 kg potatoes
  • 1 tablespoon butter
  • Half a bunch of dill, chopped
  • 1 teaspoon salt

For the Ground Beef Sauce:

  • 250 grams ground beef
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tablespoon tomato paste
  • 1 cup boiled peas and carrots
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 cup water

For Assembly:

  • Grated cheese

Instructions:

1. Prepare the Potatoes:

  • Dice the potatoes into small cubes. Boil them until tender, then drain well.
  • Toss the cooked potatoes with butter, chopped dill, and salt. Allow to cool in the refrigerator until firm.

2. Shape and Arrange the Potato Bowls:

  • Divide the potato mixture into four equal parts. Roll each part into a ball and flatten with your fingers to create a bowl-like shape.
  • Grease a baking dish and arrange the potato bowls in it.

3. Make the Ground Beef Sauce:

  • In a skillet, cook the ground beef over medium heat until browned. Add chopped onion, red bell pepper, and green bell pepper. Cook until vegetables are tender.
  • Stir in tomato paste, boiled peas, carrots, salt, black pepper, cumin, paprika, and water. Simmer until the sauce thickens and flavors meld.

4. Assemble and Bake:

  • Preheat the oven to 180°C (350°F).
  • Fill each potato bowl with a pinch of grated cheese. Spoon the prepared ground beef mixture generously into each bowl.
  • Top each filled bowl with more grated cheese.
  • Bake in the preheated oven for 20-25 minutes or until the cheese is melted and golden brown.
