Ingredients:
For the Crust:
- 1 ¾ cups flour
- ¾ tsp sea salt
- 1 ½ tsp sugar
- ½ cup chilled, cubed butter
- 1 tsp vanilla extract
- ¼ cup + 2 tbsp cold water
For the Filling:
- 2 cups sliced strawberries
- 1 cup vanilla yogurt
- 1 tbsp honey
- 2 eggs
- 3 tbsp sugar
- 1 tsp vanilla extract
For the Lemon Curd:
- 3 eggs
- ½ cup lemon juice
- 1 cup sugar
- ¼ cup lemon zest
- 6 tbsp unsalted butter
- Pinch of coarse salt
Directions:
- Make the crust: Mix dry ingredients, cut in butter, add vanilla and water. Press into pan, refrigerate, then bake.
- Prepare the filling: Mix yogurt, honey, eggs, sugar, and vanilla. Pour over baked crust, add sliced strawberries, and bake.
- Make lemon curd: Whisk eggs, lemon juice, sugar, and zest. Cook until thick, stir in butter, strain, and cool.
- Spread lemon curd over cooled tart and refrigerate.
