Sticky orange tofu

This was my go to meal during last summer and I just had to share my take on it with you, of course by adding a little spicy kick (but that’s optional) it’s the perfect comfort meal and is packed with flavour.

You will need:

– 1 block of firm tofu
– 3 tbsp cornflour
– 2 tbsp olive oil
– Handful of cashews
– Juice from 1 orange
– 1 tsp orange zest
– 1 tsp garlic
– 1 tsp ginger
– 3 tbsp soy sauce
– 1 tbsp rice vinegar
– 2 tbsp tomato puree
– 1/4 cup golden syrup
– 2 tsp sriracha (optional)

Method:

1. Chop the tofu into chunks and place in a bowl with the cornflour, shaking it until fully coated.
2. Pour the olive oil in a pan on medium heat. Add the tofu and cook until crispy (around 6-7 minutes)
3. Pour the fresh orange juice into a bowl along with the zest, garlic, ginger, soy sauce, rice vinegar, tomato purée, golden syrup and sriracha. Stir to combine.
4. Add the cashews to a separate pan and cook for a couple of minutes on low heat.
5. Add the cashews and the sauce into the pan with the tofu and cook until the sauce has thickened.
6. Serve with rice, sprinkle some sesame seeds on top and enjoy!
