Ingredients
For the Cake:
- 300 ml hot milk or water
- 300 g pitted dates
- 1 tsp baking soda
- 150 g butter
- 80 g brown sugar
- 2 tbsp vanilla extract
- 3 eggs
- 180 g flour
- 1 packet of baking powder
- 1/2 tsp salt
- 1 tsp cinnamon (optional)
- 1/2 tsp ginger (optional)
- 1/2 tsp cardamom (optional)
For the Butterscotch Sauce:
- 150 g butter
- 150 g brown sugar
- 2 tsp vanilla extract
- 1/4 tsp salt
- 380 ml heavy cream
Instructions
For the Cake:
- Prepare the Dates: Boil the milk in a saucepan. Once hot, add the dates and baking soda, and let them soak for 10 minutes to soften.
- Blend the Dates: After soaking, blend the mixture until smooth, or mash with a fork if you prefer a chunkier texture.
- Mix the Wet Ingredients: In a separate bowl, cream the butter, brown sugar, and vanilla extract for about 5 minutes.
- Combine with Dates: Add the date mixture and eggs to the butter mixture and blend well.
- Prepare Dry Ingredients: In another bowl, combine the flour, baking powder, salt, and optional spices (cinnamon, ginger, cardamom).
- Combine and Mix: Gradually add the dry ingredients to the wet mixture, stirring until well combined.
- Bake: Grease and flour a baking pan, pour in the batter, and bake in a preheated oven at 180°C (350°F) for 40-45 minutes.
For the Butterscotch Sauce:
- Cook the Sauce: Combine all sauce ingredients in a saucepan. Bring to a boil, then let it simmer for 1-2 minutes until it thickens slightly
