PASTELI – Honey & Sesame Bars

A simple and delicious recipe that dates as far back as Greek Antiquity. Centuries later, we are still enjoying it as a snack and healthy sweet treat!

Ingredients:

  • 500 grams sesame seeds
  • 500 grams honey
  • 100 grams pistachios

Instructions:

  1. Toast the Sesame Seeds and Pistachios:
  • Begin by placing a pan over medium-high heat.
  • Add the sesame seeds and toast them for approximately 5 minutes, stirring frequently to ensure they don’t burn.
  • After 5 minutes, add the pistachios to the pan.
  • Continue toasting the mixture for another 5 minutes, or until the sesame seeds start to turn a golden color.
  • Once toasted, remove the sesame seeds and pistachios from the pan and set them aside.
  1. Prepare the Honey:
  • Allow the pan to cool slightly after removing the sesame seeds and pistachios.
  • Pour the honey into the same pan and bring it to a boil over medium-high heat.
  • As soon as the honey begins to boil and bubble, add the toasted sesame seeds and pistachios back into the pan.
  1. Cook the Mixture:
  • Stir the mixture constantly for up to 10 minutes if you prefer a soft and sticky pasteli bar.
  • For a harder and crunchier bar, continue cooking for an additional 10 minutes, making a total of 20 minutes.
  1. Transfer to Tray:
  • Line a 25×20 cm tray with baking paper.
  • Pour the sesame and honey mixture into the tray, spreading it out evenly.
  • Place another sheet of baking paper on top of the mixture.
  • Use the back of a large spoon or a small rolling pin to gently press down and compact the mixture.
  1. Cool and Cut:
  • Allow the mixture to cool completely in the tray.
  • Once cooled, remove the top sheet of baking paper.
  • Cut the mixture into bars of your desired size.
  1. Store:
  • Store the pasteli bars in an airtight container.
  • To prevent the bars from sticking to each other, place a piece of paper between each bar.
  • These bars are perfect for a quick snack or a healthy treat. Enjoy the timeless combination of honey and sesame that has been cherished since ancient Greek times!
