Homemade Pickled Beets Recipe

Ingredients:

  • 6-8 medium-sized beets, washed and trimmed
  • 1 cup white vinegar
  • 1 cup water
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon whole cloves
  • 1 teaspoon whole allspice berries
  • 1 teaspoon black peppercorns
  • 1 cinnamon stick
  • 1 bay leaf
  • Optional: sliced onions

Instructions:

  1. In a large pot, cover the beets with water and bring to a boil. Reduce heat and simmer until the beets are tender, about 30-40 minutes. Drain and let cool.
  2. Once cool, peel and slice the beets into rounds or desired shape.
  3. In a separate pot, combine vinegar, water, sugar, salt, cloves, allspice, peppercorns, cinnamon, and bay leaf. Bring to a boil and simmer for 5 minutes.
  4. Place the sliced beets in a clean glass jar, layering with optional sliced onions if desired.
  5. Pour the hot vinegar mixture over the beets, ensuring they are fully submerged.
