- 100g rolled oats
- 100g whole grain spelt flour
- A pinch of salt
- 1 ½ tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- 35g chopped almonds
- 1 small apple, diced
- 35g cranberries
- 1 small banana
- 1 egg
- 100g cooking oil or melted coconut oil
- 250g buttermilk
- Some favorite muesli for topping (or extra rolled oats)
Instructions:
- Preheat your oven to 180°C (350°F). Grease a muffin tin or line it with paper muffin cups.
- In a large bowl, combine the oats, flour, salt, baking powder, baking soda, and cinnamon. Chop the almonds and dice the apple, then stir both into the flour mixture along with the cranberries.
- In another bowl, mash the banana into a puree. Beat in the egg, then add the oil and buttermilk, mixing well.
