- 120g caster sugar
- 60g brown sugar
- 1 egg (room temperature)
- 1-2 tsp vanilla extract
- 200g plain flour
- 1 tsp baking soda
- 40g cocoa powder
- 30g Mini marshmallows (+ extra for topping)
- Chocolate chips (as desired)
Method:
- Cream together butter and sugars in a bowl until fluffy.
- Whisk in the egg and vanilla extract until well combined.
- Sift in the flour, cocoa powder, and baking soda, then fold until fully combined.
- Fold in chocolate chips and mini marshmallows.
- Take 1-2 heaped tbsp of cookie dough (approximately 50g-60g), roll into a ball, and place on a lined baking tray/plate. Add extra chocolate chips on top for more chocolatey goodness.
- Note: Ensure that the marshmallows are covered by the cookie dough to prevent them from melting out of the cookie.
- Chill the cookie dough balls for 1-2 hours.
- Preheat the oven to 160C.
- Bake at 160C for 14-17 minutes. Adjust the baking time to achieve your desired level of fudginess or gooeyness.
