Eggplant with Ground Beef Sauce

Ingredients:

  • 2 large and thick eggplants
  • For topping: 5 tablespoons of oil, a bit of salt, and black pepper

    Ground Beef:
  • 200-250 grams of ground beef
  • 1 onion
  • 2 cloves of garlic
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 tablespoon of tomato paste
  • 7-8 tablespoons of tomato sauce
  • 1 teaspoon of oregano
  • 1/2 teaspoon of sweet paprika
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of red pepper flakes
  • Salt

    Additional Ingredients:
  • 200 ml of hot water
  • 1 teaspoon of tomato paste
  • 1 tablespoon of olive oil
  • Salt and black pepper
  • Grated cheese

Preparation:

  1. Slice the eggplants lengthwise with a knife. Place them in a bowl, fill with water, and add a bit of salt. Let sit for 20 minutes, then drain and dry.
  2. Place the eggplant slices on a baking sheet. Mix the oil with salt and black pepper and spread over the slices. Bake in a preheated oven at 220 degrees Celsius for about 20 minutes.
  3. Meanwhile, prepare the ground beef filling. First, sauté the onion, add the ground beef, and cook until it changes color. Add the chopped peppers and garlic and continue sautéing. Then, add the tomato paste and spices and mix well. Incorporate the crushed tomatoes, let it cook briefly, then remove from heat.
  4. Place a layer of eggplant slices in an oven dish, add some of the ground beef sauce, cover with another eggplant slice and more meat. Sprinkle some cheese between layers. For each portion, use 3 layers of eggplant. Finish with meat and sprinkle cheese on top. Mix the tomato paste, water, salt, black pepper, and oil and pour over the oven dish. Bake everything in a hot oven (medium; upper/lower heat at 190 degrees Celsius) for about 20 minutes. Enjoy 😋
