Creamy Buckwheat & Caramelized Pear Porridge

Creamy buckwheat porridge with caramelized pears is one of my favorite breakfasts at the moment! Smooth, creamy, and lightly spiced, this grain-free porridge is incredibly comforting on a chilly winter morning. Topped with juicy, caramelized pears, a drizzle of maple syrup, and lightly toasted nuts, it’s pure heaven! I love making a big batch so I can enjoy it over a few days for quick and easy breakfasts. It’s delicious straight from the blender or gently warmed in a saucepan.

Creamy Buckwheat Porridge (makes 2 large bowls)

Caramelized Pear

  • 1 tsp vegetable oil
  • 2 tbsp maple or agave syrup, plus extra to serve
  • 1 tsp coconut sugar
  • ½ tsp ground mixed spice
  • 2 small pears, halved

Creamy Buckwheat Porridge

  • 130g cashews, soaked in cold water overnight
  • 100g buckwheat, soaked in cold water overnight
  • 1 tsp vanilla extract
  • 3 pitted dates
  • 2 tbsp maple or agave syrup
  • ½ tsp ground ginger
  • ½ tsp ground cinnamon
  • 300ml almond milk

Topping

  • 50g (1¾oz) cashews, roughly chopped

Instructions

  1. Bake the Pear: Preheat the oven to 180°C and line a baking tray with parchment paper. In a small bowl, mix together the vegetable oil, maple syrup, coconut sugar, and mixed spice. Place the pear halves on the lined baking tray and brush them with the maple syrup mixture. Bake in the oven for 30 minutes, until the pears begin to soften and caramelize. After 20 minutes, add the cashews for the topping to a small baking tray and place in the oven to toast for the remaining time, watching closely to avoid burning.
  2. Prepare the Porridge: Drain and rinse the soaked cashews and buckwheat well with cold water. Add them to a blender along with the vanilla extract, pitted dates, maple syrup, ginger, and cinnamon. Blend until the mixture is smooth and creamy. Gradually add the almond milk until the desired consistency is reached.
  3. Assemble and Serve: Pour the creamy porridge into bowls and top with the spiced pears and toasted cashews. Drizzle with additional maple syrup if desired.
