Ingredients:
- 1 medium sweet potato
- 1 tbsp olive oil
- 1 tsp paprika
- Salt and pepper, to taste
- 1 pack of chicken tikka skewers
- 2 heaped tbsp of hummus
- 1/4 cucumber
- Handful of cherry tomatoes
- Large handful of mixed leaves
- 1 tbsp pumpkin seeds
- 2 tbsp pomegranate
Instructions:
- Preheat the oven to 200°C (or preheat the air fryer to 180°C).
- Peel and chop the sweet potato into small chunks.
- Place the sweet potato on a baking tray, drizzle with olive oil, and season with paprika, salt, and pepper.
- Bake in the oven for 25 minutes or air fry for 20 minutes until golden and crispy.
- Meanwhile, slice the cucumber and quarter it. Halve the cherry tomatoes. Set aside.
- Heat a nonstick pan over medium heat. Add a small amount of vegetable oil.
- Place the Planted chicken tikka skewers in the pan and cook for a few minutes on each side until heated through and slightly charred.
- Spread hummus at the bottom of a bowl.
- Arrange mixed leaves, sweet potato chunks, and chicken tikka skewers in the bowl.
- Top with cucumber slices, cherry tomatoes, pomegranate seeds, and pumpkin seeds.
