BANANA WALNUT CARROT CAKE

This cake is not only delicious but it’s also packed with healthy fats thanks to soaked and dehydrated walnuts. I love that they are soaked to break down the physic acid and enzyme inhibitors so you get the maximum nutritional benefits from this superfood!

Ingredients:
-1 banana mashed
-1 egg
-2 tbsp maple syrup
-2 tbsp coconut oil (melted)
-2 tbsp greek yogurt
-1 tsp vanilla extract
-1 tsp baking soda
-3/4 cup gluten free flour (or oat flour)
-1 tsp cinnamon
-1/4 tsp ginger
-1/4 tsp nutmeg
-1/4 cup grated carrots
-1/4 cup raisins
-1/4 cup soaked and dehydrated walnuts

For the frosting :
-1/2 cup Greek yogurt
-2 tbsp cream cheese
-1/4 cup vanilla protein powder
-1 tbsp maple syrup
-pinch of salt
-1 tsp vanilla extract

Method:

Preheat your oven to 350° F.
In a bowl, mix together all of your wet ingredients, then sift in the flour, baking soda, and spices. Fold in the grated carrots, walnuts, and raisins. Pour the batter into two 5 inch cake pans and bake for 25-30 minutes until a toothpick comes out clean. Let the cakes cool completely.

Whip together the frosting with an electric mixer, then spread over the cooled cake layers. Garnish with extra chopped walnuts and enjoy!
